- Tamarind mole served over Rocky Ranch chicken breast garnished
w/ toasted sesame seeds, accompanied with Mexican Rice
- Camarones Al Ajillo
- Sauteed garlic prawns served over white rice, garnished w/
toasted guajillo chile
- Carnitas Estilo Uruapan
- Slow cooked pork accompanied with Nuevo Mexico chile stuffed
w/ beans, and hand corn tortillas
- Chile Poblana con Verduras
- Roasted chile poblana, stuffed w/ chayote, zucchini, green & yellow
bell pepper, served over black bean puree, topped w/ mango
salsa
- Cochinita Pibil
- Pork marinated in achiote adobe sauce, steamed in banana
leaves, garnished w/ marinated red onions, served with white
rice and homemade corn tortillas
- Asada Jalisco
- Grilled Niman Ranch Steak, with grilled nopal, grilled Anaheim
chile stuffed w/ cheese, pot beans, hand made tortillas and
fresh salsa
- Ensalada Caribena
- Mixed green and spinach tossed in a cilantro and mint vinaigrette,
with black beans, mango and grilled chicken.
